Brighton’s food scene is about to get a slice of Neapolitan authenticity, as Rudy’s Pizza Napoletana prepares to open its doors in the heart of the city this spring. The popular Manchester-born brand will launch its latest pizzeria on Jubilee Street, marking its first venture on the South Coast and its 31st site nationwide.
Taking over the former Chilli Pickle premises in North Laine, Rudy’s Brighton promises to bring the same relaxed atmosphere and high-quality pizza that has won over fans across the UK, from Manchester to London’s Soho and Shoreditch.
It remains to be seen how it will compare to Pizza Pilgrims, VIP, Fatto a Mano, and Yeastie Boys, but also to the genuine authentic History Pizza or Pizza 500. But I can’t wait to find out.
Authentic Neapolitan Pizza, Cooked in 60 Seconds
What sets Rudy’s apart is its uncompromising commitment to Neapolitan pizza-making traditions. Using ingredients imported directly from Naples—San Marzano tomatoes, Fior di Latte mozzarella, and dough made from Caputo ‘00’ flour—the team creates pizzas that are light, flavourful, and ready in just 60 seconds using a traditional Stefano Ferrara oven.
Classic pizzas like the Margherita, Marinara, and Calabrese will be mainstays on the Brighton menu, alongside rotating specials every six weeks inspired by iconic pizzerias around the globe.
Guests can also look forward to Italian desserts, signature spritzes, and a drinks list featuring Italian beers, cocktails, and local craft lagers.
Stylish Space, Community Focus
Rudy’s Brighton will occupy a spacious 3,500 square-foot venue, complete with around 160 indoor seats and a design that reflects the brand’s signature industrial-minimalist aesthetic. Whether you’re grabbing a casual bite before a show or meeting friends for a lively dinner, the venue aims to be a welcoming neighbourhood pizzeria.
With the opening, Rudy’s will also bring around 30 new jobs to Brighton, including key positions for managers and skilled pizzaioli, the specially trained pizza chefs behind each perfect pie. The team has recently launched the Rudy’s Pizzaiolo Academy, offering training for both experienced chefs and newcomers.
